How to make Chicken Curry

Geoff's specialty is curry. He loves making curry and he loves serving it to friends. Chances are if you come over for dinner you'll be served curry at least once. He loves his spicy! I have to keep reminding him when he's cooking for guests that we want our company to come back. We don't want to burn their taste buds off and scare them away forever! =)

First thing i had to do was clear off the kitchen counter. Not only did we need space to make dinner. We also needed space for this little guy. He isn't content to sit in his chair on the floor near you. He wants to be closer. Up on the counter closer. So we set Ethan up right next to us on the counter. Don't worry, he's buckled in and perfectly safe.

There are different types of curry you can make. Thai curry uses coconut milk but since we didn't have any of that we made an Indian curry called Vindaloo. If you have the curry paste it is really easy and only uses a few different ingredients.

We buy our curry paste, coconut milk and rice at the Asian supermarket in Belfast. When we were in Florida there were plenty of Asian supermarkets around. We also found some things at Publics. Up north we found Wegmans was the best place to find curry paste.

Here's the list of ingredients we'll need for the Vindaloo curry...

Curry paste
Onions
Chopped tomatoes
Meat (we used chicken but you can use any kind, beef, shrimp, fish...)

That's it! I told you there weren't many ingredients!


The curry paste actually has the recipe right on the back!


Chop your onions.
Chop your tomatoes if you are using fresh ones.
These came straight out of the garden.
(not my garden. my father in laws beautiful garden)

Take a moment to kiss some precious fingers and toes...

Fry your onions in a bit of oil.
Then add your curry paste to make it as spicy as you want.


Add your tomatoes and some water.

I didn't really measure anything. This is a really forgiving recipe.

Here's a rough guess at what i put in. A couple cups of chopped onions. And a couple cups of tomatoes. 5-6 tablespoons of curry paste. Which was a couple tablespoons too much for Elijah and I but just perfect for Geoff.

Then add your meat.
I put in 6 chicken legs...
Simmer until done.

Serve over rice.

Recap:

Fry onions in oil
Add curry paste
Add tomatoes and water.
Add meat
Simmer until done.
Serve over rice.

Done!

oh yeah, made that before! and i've made others, but yes, a very forgiving recipe. i've never actually followed a recipe..i just use my own taste buds to tell me if it's right. josh and i like it HOT as well..to the point we're sweating from it!

i've made it with powder, and paste, or one or the other, chicken broth, i've even heard of people using brown sugar...etc...tumeric, tarragon, things of that nature.... you can even get a basil that's just right....thai basil.... yum!

has to be with potatoes, onions and carrots....and of course chicken....

yum! i'm kind of hungry for it now!

Yes, I saw this this morning! Looks yummy. Hey can you send me what you generally put in green curry? Not the items, the names! :-) But you did make a mean carrot stick in your day!

btw, your pix are beautiful, i think. cookbook like....

to the rest...you need to google it maybe.... because there are SO MANY different kinds that you can make.... with as many as 5-? items in it.

there is green paste out there...i think red or yellow curry's are the best though....

ohhh! seeing these British ingredients make me miss shopping at Tesco and Asda :)

We hope to visit soon and stock up on the good stuff! I used to LOVE mushy peas, jelly babies, and the mincemeat pie filling.
