Elijah and I are waiting for these delicious looking cookies to get out of the oven...
As most of you know my husband can't eat wheat flour, he has celiac disease which makes him unable to eat gluten. So when i bake i use a mixture of gluten free flours but this cookies recipe doesn't use any flour at all so that made it really easy!
They smell really good right now. I'm not sure if there will be any left by the time Geoff gets home tonight! =)

Flourless Peanut Butter Cookies
One cup creamy peanut butter
One cup white sugar
One teaspoon baking powder
One egg
Preheat the oven to 350°. (180 c)
Cream the peanut butter and sugar in a bowl.
Beat in the baking powder.
Add the egg.
Mix until it is all well combined.
The dough will be sticky, so be prepared to get your hands messy. Roll some dough into a ball. (How big? That depends on you. I have found, however, that the smaller these cookies are, the better they hold together. Eat two instead of one!) Roll the ball into white sugar. Line a baking sheet, covered in parchment paper, with sugary balls of dough.
Bake in the oven for about ten minutes. You will know the cookies are done when they feel coherent, but still a little soft. Take the tray out of the oven and let the cookies rest for at least five minutes. Afterwards, carefully transfer them to a cooling rack. After ten minutes or so, they will have hardened and be glistening with sugar.
P.S. I added Chocolate chips to mine.

Oh my goodness can I say YUM??!!! I absolutely love peanut butter!! I was once allergic to it for years and now I can have it, but I still have to watch how much I eat of it. What a good mommmy and wife you are to make homemade cookies!! Could you just toss one through the computer my way??! ;)

Those are great! We have a friend who has Celiac's Disease. We have enjoyed a couple of her cookies.
It is nice that there is something adapted that tastes this good!
